Easy Eggs Benedict

Eggs Benedict with bacon, poached egg and toast costs under $20 to make 2 servings.
Base option: Serve on hash browns instead of bread, toast or muffins.

Ingredients
- 2 eggs, for poaching
- Bacon, ham or salmon
- Bread, bagel, muffin, crumpets or hash browns
- Hollandaise sauce
- Greens such as spinach
- Mushrooms and tomatoes, to serve
- Salt, pepper and garnish
Method
- 1Your main concern with this dish is the poached egg — that is the trick. When cutting into the egg, the yolk should flow over the top.
- 2If making Eggs Benedict with ham or salmon, they do not require cooking first. If using bacon, you need to pan fry or grill it depending on your preference until cooked the way you like it.
- 3Toast your bread or crumpets. I prefer a fresh bread bun or a crusty round. I like to put a little hollandaise sauce on the base, then greens on the toast before laying the egg on last.
- 4Just before serving, warm the hollandaise sauce for about 20 seconds, pour over the top, season and garnish. Serve with mushrooms and fried tomatoes.
- 5Eat and enjoy.
- 6Remember: if the egg yolk is hard, it has overcooked. A soft flowing yolk is ideal.
- 7Eggs Benedict can be made using any favourite base — bread, bagel, muffin or a hash brown. My favourite is bacon or ham, but salmon is great too. Add vegetables such as spinach, avocado, tomato or mushrooms. Take creative licence and create your own version.
