Massaman Beef Curry

A rich, mildly spiced beef curry with coconut milk, potatoes and peanuts.
This is a great slow-cooked meal to make ahead - the flavour is even better the next day.

Ingredients
- 1kg diced beef
- 1 tbsp vegetable oil
- 2 onions, sliced
- ½ cup Massaman curry paste
- 1 can coconut milk
- 1 cinnamon stick
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 4 large potatoes, peeled & chopped
- ½ cup roasted peanuts
- Fresh coriander, to garnish
- Steamed rice, to serve
Method
- 1Heat oil in a large pot. Add beef in batches and brown well. Remove and set aside.
- 2Add onion and cook until softened.
- 3Add Massaman curry paste and cook for 1–2 minutes until fragrant.
- 4Return beef to pot. Add coconut milk, cinnamon stick, fish sauce and brown sugar. Stir well.
- 5Cover and simmer gently for about 1 hour.
- 6Add potatoes and continue cooking for 30–45 minutes, until beef is tender and potatoes are cooked through.
- 7Taste and adjust seasoning if required.
- 8Serve with steamed rice and finish with roasted peanuts and fresh coriander.
