Massaman Beef Curry

A rich, mildly spiced beef curry with coconut milk, potatoes and peanuts.

This is a great slow-cooked meal to make ahead - the flavour is even better the next day.

Massaman Beef Curry — Pantrix

Ingredients

  • 1kg diced beef
  • 1 tbsp vegetable oil
  • 2 onions, sliced
  • ½ cup Massaman curry paste
  • 1 can coconut milk
  • 1 cinnamon stick
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 4 large potatoes, peeled & chopped
  • ½ cup roasted peanuts
  • Fresh coriander, to garnish
  • Steamed rice, to serve

Method

  1. 1Heat oil in a large pot. Add beef in batches and brown well. Remove and set aside.
  2. 2Add onion and cook until softened.
  3. 3Add Massaman curry paste and cook for 1–2 minutes until fragrant.
  4. 4Return beef to pot. Add coconut milk, cinnamon stick, fish sauce and brown sugar. Stir well.
  5. 5Cover and simmer gently for about 1 hour.
  6. 6Add potatoes and continue cooking for 30–45 minutes, until beef is tender and potatoes are cooked through.
  7. 7Taste and adjust seasoning if required.
  8. 8Serve with steamed rice and finish with roasted peanuts and fresh coriander.
