Soy Chicken with Cabbage Stir-Fry & Avocado Rice

Soy chicken with a bacon and cabbage stir-fry and avocado rice — a full plate for one at around $2.40 a serve.

Ingredients
- Cabbage Stir-Fry
- 1 cup shredded cabbage
- 2 rashers bacon, chopped
- ¼ onion, sliced
- ½ tsp garlic mince
- 1 tsp oil
- Salt and pepper
- Soy Chicken
- 80g chicken breast, thinly sliced
- 1 tsp garlic mince
- 1 tsp chilli sauce or chilli paste
- 1 tsp soy sauce
- 1 tsp oil
- 1 spring onion, sliced
- Avocado Rice
- 1 cup cooked rice
- ¼ avocado, sliced
- 2 cherry tomatoes, sliced
- Salt and pepper
Method
- 1Cook the cabbage stir-fry: Heat oil in a pan. Add bacon and cook until lightly crispy. Add onion and cook until softened. Add garlic and cabbage and stir-fry until tender. Season with salt and pepper and set aside.
- 2Cook the Soy Chicken: Heat oil in the pan over medium-high heat. Add the chicken and cook until browned and cooked through. Add garlic, chilli and soy sauce. Toss well so the chicken is coated. Add the spring onion and cook briefly.
- 3Prepare the rice: Warm the cooked rice if required. Season lightly with salt and pepper. Top with sliced avocado and cherry tomato.
- 4Serve: Plate the cabbage stir-fry, Soy Chicken and avocado rice together.
