Sticky BBQ Chilli Chicken on Chinese Chilli Mash

Sticky BBQ chilli chicken served on Chinese chilli mash with cucumber and red onion. Not bad for a meal that cost under $3 to make.

Ingredients
- Chinese Chilli Mash
- 8 pieces frozen mash
- ½ onion, sliced
- 1 tbsp butter or margarine
- 1 tsp Chinese chilli paste/chilli crisp
- Salt and pepper
- 1 tsp oil
- Chicken
- 60g chicken, thinly sliced
- 1 tsp garlic mince
- ¼ cup flour
- Salt and pepper
- 1 tsp oil for frying
- Sticky BBQ Sauce
- 1 tbsp BBQ sauce
- ¼ tsp chilli paste
- ½ tsp garlic mince
- To Serve
- 6 thin slices cucumber
- ½ slice red onion, thinly sliced
Method
- 1Heat the butter and a little oil in a pan.
- 2Add the sliced onion and cook until softened.
- 3Add the frozen mash pieces, Chinese chilli paste, salt and pepper.
- 4Cook, turning and breaking the mash slightly as it cooks, until hot and golden.
- 5Thinly slice the chicken and coat with garlic mince.
- 6Lightly coat the chicken in seasoned flour.
- 7Fry until golden and cooked through.
- 8Remove and drain briefly on paper towel.
- 9Add BBQ sauce, chilli paste and garlic to the pan and heat.
- 10Return the chicken and toss until coated in the sticky sauce.
- 11Plate the chilli mash, top with the BBQ chicken and finish with cucumber and red onion.
