Tuna Patties

Quick, budget-friendly meal packed with flavour, best made ahead of time.

Ingredients
- ½ large tin tuna, drained
- 2 cups prepared mashed potato
- 1 egg
- ½ carrot, grated
- ¼ cup peas
- ½ red onion, finely diced
- 1 tbsp sweet chilli sauce
- 1 tsp fish sauce
- ½ tsp chilli (to taste)
- Fresh coriander, chopped (optional)
- Fresh mint, chopped (optional)
- Salt & pepper
- Oil for cooking
- For coating: flour
- 1 egg whisked with milk
- Breadcrumbs
Method
- 1Prepare mashed potato if needed and allow to cool.
- 2In a bowl, combine tuna, mashed potato and egg.
- 3Add carrot, peas, sweet chilli sauce, fish sauce, chilli, coriander and mint.
- 4Season with salt and pepper and mix well.
- 5Form mixture into patties.
- 6Lightly coat patties in flour.
- 7Place on a tray and freeze until firm.
- 8Dip into beaten egg, then coat in breadcrumbs.
- 9Repeat egg and breadcrumbs for a double coating.
- 10Return to freezer until firm.
- 11Heat oil in a fry pan over medium heat.
- 12Cook patties 4–5 minutes each side until golden and heated through.
