Crispy Chicken Bánh Mì Pocket

A quick Vietnamese-inspired chicken pocket using crispy Turkish bread, fresh herbs and spicy salad.
Pantrix Tip: Turkish bread end pieces are perfect for this recipe — crispy outside, soft enough inside to form a pocket.

Ingredients
- 140g chicken breast, thinly sliced
- 1 tbsp soy sauce
- ½ roll-size piece Turkish bread, preferably an end piece
- Bánh mì dressing, to drizzle or mayonnaise/aioli
- Carrot, thinly sliced
- Cucumber, thinly sliced
- Spring onion, sliced
- Fresh mint, chopped
- Fresh coriander, chopped
- Fresh chilli, finely diced
- Chilli sauce, to drizzle
- ABC Kecap Manis, to drizzle
Method
- 1Heat a frying pan and cook chicken with soy sauce until browned and cooked through.
- 2Place Turkish bread in a hot oven for about 8 minutes until crisp.
- 3Remove bread and carefully open the centre to form a pocket.
- 4Drizzle inside with bánh mì dressing, mayonnaise or aioli.
- 5Mix carrot, cucumber, spring onion, mint, coriander and fresh chilli.
- 6Fill the bread pocket with the spicy salad and cooked chicken.
- 7Finish with chilli sauce and a drizzle of ABC Kecap Manis.
