Deep Fried Spring Rolls

Crispy homemade spring rolls packed with pork, vegetables and Asian flavours.

Ingredients
- 200g pork mince
- ½ cup cabbage, finely sliced
- ½ cup carrot, grated
- ½ cup bean sprouts
- 1 spring onion, sliced
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 12 spring roll wrappers
- 1 egg, beaten, for sealing
- Oil for deep frying
Method
- 1Heat a little oil in a pan and cook pork mince until browned.
- 2Add garlic and ginger and cook briefly.
- 3Add cabbage, carrot, bean sprouts and spring onion. Stir-fry until just softened.
- 4Add soy sauce, oyster sauce and sesame oil. Mix well, then remove from heat and allow filling to cool.
- 5Place filling across one corner of each spring roll wrapper.
- 6Fold the corner over the filling, fold in both sides and roll tightly.
- 7Brush the final corner with beaten egg to seal.
- 8Heat oil to 170°C and fry spring rolls in batches until golden and crispy.
- 9Drain on paper towel and serve with sweet chilli or your favourite dipping sauce.
