Fresh Fruit Platter with Berry Yoghurt

Pantrix Tip: Use seasonal fruit for the best flavour and value. Swap the yoghurt for a dairy-free option if preferred.

Ingredients
- 1 punnet strawberries
- 1 punnet raspberries
- 1 punnet blueberries
- 2 oranges
- 2 kiwi fruit
- 1 dragon fruit
- Yoghurt, plain or vanilla
- Roasted almonds, to sprinkle
- Fresh mint leaves, to garnish
Method
- 1Wash all fruit well.
- 2Slice the oranges into thin rounds.
- 3Slice the kiwi fruit. Cut one kiwi into thin rounds and use the second kiwi to create kiwi flowers as shown in the photo.
- 4Slice the dragon fruit into thin rounds.
- 5Prepare the strawberries, leaving some whole and slicing some for topping.
- 6Divide the yoghurt between 4 small bowls.
- 7Top each bowl with a mixture of strawberries, raspberries and blueberries.
- 8Sprinkle with roasted almonds and garnish with fresh mint leaves.
- 9Arrange all the prepared fruit on a platter around the yoghurt bowls and serve.
