Fresh Fruit Platter with Berry Yoghurt

Pantrix Tip: Use seasonal fruit for the best flavour and value. Swap the yoghurt for a dairy-free option if preferred.

Fresh Fruit Platter with Berry Yoghurt — Pantrix

Ingredients

  • 1 punnet strawberries
  • 1 punnet raspberries
  • 1 punnet blueberries
  • 2 oranges
  • 2 kiwi fruit
  • 1 dragon fruit
  • Yoghurt, plain or vanilla
  • Roasted almonds, to sprinkle
  • Fresh mint leaves, to garnish

Method

  1. 1Wash all fruit well.
  2. 2Slice the oranges into thin rounds.
  3. 3Slice the kiwi fruit. Cut one kiwi into thin rounds and use the second kiwi to create kiwi flowers as shown in the photo.
  4. 4Slice the dragon fruit into thin rounds.
  5. 5Prepare the strawberries, leaving some whole and slicing some for topping.
  6. 6Divide the yoghurt between 4 small bowls.
  7. 7Top each bowl with a mixture of strawberries, raspberries and blueberries.
  8. 8Sprinkle with roasted almonds and garnish with fresh mint leaves.
  9. 9Arrange all the prepared fruit on a platter around the yoghurt bowls and serve.
