Fresh Spring Rolls

Fresh, crunchy spring rolls that are perfect for using leftover cooked meat.
Spring rolls are perfect for using whatever you already have. Swap the chicken for leftover beef, pork or prawns and change the vegetables to suit your fridge.

Ingredients
- 8 rice paper sheets
- 1 cup leftover cooked chicken or meat, thinly sliced
- 1 carrot, grated
- ½ cucumber, thinly sliced
- 1 cup lettuce, shredded
- ½ cup bean sprouts
- Fresh coriander
- Fresh mint
- Sweet chilli sauce, for serving
Method
- 1Prepare chicken/meat and vegetables into thin strips.
- 2Fill a shallow dish with warm water. Dip one rice paper sheet into the water until just softened.
- 3Lay flat and add lettuce, carrot, cucumber, bean sprouts, herbs and leftover meat across the centre.
- 4Fold the sides in, then roll tightly.
- 5Repeat with remaining ingredients.
- 6Serve fresh with sweet chilli sauce.
